Designed with German stainless steel the blades have a sharp cutting edge that makes cutting through tough meats, joints, and bones an easy task. The blade-targeted tempering happens in several stages to ensure a hardness of over 60HRc, allowing it to last longer in the commercial kitchens without breaking or dulling.
The blade is a half-bolster which enables you to use the full length making it ideal for larger ingredients like cabbages or lettuces.
